I’m a huge fan of guacamole and salsa and could pretty much live on it. However, after a while you can get tired of those two things (wait? getting tired of guacamole can actually happen?!?) and need something different but just as delicious to get you going.

Enter this avocado beef fiesta dip that’s one of the best things I’ve ever whipped up in this kitchen.

Just think about it for a second, perfectly marinated ground beef cooked to perfection, soft and slightly caramelized onion, a ton of cilantro, a bit of salt, a generous squeeze of lemon juice, some bits of jalapeños and all the avocado chunks you crave.

Oh my gosh, just talking about it is making me want to head to the kitchen to make this again.

For me, the star of this recipe is the beef (after all that’s why this is called beef fiesta dip). The main reason why it’s so flavorful is because we seasoned the meat in advance and then let it sit for a while so the spices could really get into the meat.

If you are short of time and need to make this right now (I totally get you my friend) then you can totally skip this step, it’s not a *huge* deal, but, it does make a difference. So if you have a bit of extra time in your hands definitely go with the marinating way, it’s totally worth it!

I like to serve it in a big bowl with some paleo bread slices. I’m testing out a couple of recipes and I’m super excited to show them off, but you can also serve them with lettuce (it makes a delicious lettuce wrap filling as well) and even with some sweet potato chips.

You could also make cheesy nachos and layer this on top!

The Ultimate Beef Fiesta Dip Recipe

Ingredients

½ Pound ground beef
1 Tbsp cumin powder
2 Tsps garlic powder
2 Tsps onion powder
2 Tsps paprika
2 Tsps chili powder
1 Onion
1 Avocado
¼ Cup chopped cilantro leaves
1 Tbsp lemon juice
½ Sliced jalapeño
Drizzle olive oil
Salt and pepper to taste

Directions

In advance, season the ground beef with the condiments (cumin, garlic, onion, paprika, and chili).

Cover and refrigerate for at least 3 hours.

In a pan, heat olive oil and add the ground beef. Cook until desired doneness. Set aside

Meanwhile, slice the onion and take it to a pan over medium heat with the butter.

Stir the onions, and let them cook until caramelized. Set aside

Cut the avocado into small pieces and take to a bowl

Transfer the ground beef into the bowl with the avocado and add the caramelized onions.

Add the cilantro, lemon juice, jalapeño, salt, and pepper.

Gently, mix everything.

Serve with paleo bread and enjoy.
