If you’re still looking for the perfect holiday treat for your holiday party, try these easy homemade Christmas Chocolate Sandwich Cookies. I usually always have all of these ingredients in my cupboard so this means no running to the store either – yay!

Christmas Chocolate Sandwich Cookies
Ingredients
1/3 cup butter
3 tablespoons water
¾ cup sugar
1/3 cup cocoa powder
1 cup flour
½ teaspoon baking soda
dash of salt
vanilla or buttercream frosting (for filling)
Holly mix, sprinkles, winter candies, etc – whatever you have!
Directions
Preheat the oven to 400 degrees.
Cream together the butter, sugar, water and salt. Then slowly add in the dry ingredients until you have a smooth and almost whipped looking batter.
Chill in the fridge for 30 to 45 minutes.
Line a baking tray with parchment paper and roll the dough into uniform sized balls. Bake for about 9 to 11 minutes and then let cool on the tray.
Allow the cookies to completely cool before adding the frosting.
While they are cooling, you can pair up similarly sized and shaped cookies to make the best fits possible.
When ready, spread a generous amount of frosting (or even ice cream!) on half of the cookies.
Place the tops on and then press in the candies to make sure they stay in place.
Store in an air tight container for up to 5 days or freeze for a couple months. We’ve done this and they are a super-fast and easy treat to pull out when needed!
