This dish has some great flavors of Cajun spices and the shrimp are so succulent with just enough spice to make your mouth water. It's perfect for lunch or dinner and makes a great appetizer too!

1lbshrimp, large or jumbopeeled, deveined and butterflied
3tspCajun seasoningUse Old Bay or make your own from spices
2tbspextra-virgin olive oildivided
5clovesgarlicminced
2-3dried chiliswhole
1tbspbutter
½cuponiondiced
2roma tomatoesseeds removed, chopped
1-2green onionschopped
Lemon wedgesfor serving, optional
Instructions
Peel, devein and butterfly your shrimp. Make sure to pat dry thoroughly.
Place in a medium bowl and add 1 tbsp of olive oil and cajun seasoning. Mix throughly to coat shrimp. Set aside.
Heat the other 1 tbsp olive oil in a large skillet over medium heat. Add garlic and sauce until fragrant, only about 30 seconds. Be careful not to burn the garlic.
Add onion and saute until translucent, about 1-2 minutes. Remove to a plate.
Melt the butter in the same pan over medium heat. Add shrimp in a single layer and cook the first side until the shrimp begin to curl, about 2 minutes.
Turn and cook the second side an additional minute until a āCā shape forms and shrimp are translucent.
Return vegetables to the pan. Add tomatoes and green onions to the pan and cook til warmed through, about 1 minute.
Remove from heat and serve warm over rice, pasta or a bed of spinach with lemon wedges, if desired.
